Located in a steep mountain valley outside of Caranavi, Las Alasitas farm was established 11 years ago by our long-time supply partners, the Rodríguez family. With its thoughtful layout and fastidious management, the farm exemplifies the high standards, tight execution and careful attention to detail the family apply to everything they do.
Due to its high elevation, the farm experiences cool temperatures at night and mild weather during the day. This temperate climate causes the cherries to ripen slowly, which helps produce sweeter, more complex coffees. At harvest time, a team of highly trained pickers selects only the ripest cherries. These are then transported to the family’s state-of-the-art Buena Vista mill.
This lot was carefully wash-processed and then placed inside tanks for a 48-hour fermentation period. The resulting coffee has a vibrant, tropical acidity and a beautiful floral finish.
