We’ve been sourcing beautiful coffees through Testi Coffee in Ethiopia since 2018. Owned by quality-focused entrepreneur Faysel Yonis, this family-run business owns a number of washing stations, where they collect and process coffee grown locally by small-scale farmers. The Ayla washing station – named after one of Faysel’s nieces – is located in the Sidama region. It receives freshly picked coffee cherries from around 725 growers, most of whom farm organically on small plots of land, averaging 2-5 hectares in size.
This lot was processed using the natural method – a time-intensive technique that Ethiopian producers have perfected over generations. The coffee is carefully laid out in the fruit on raised beds and regularly turned to ensure it dries evenly and consistently. In the cup this coffee is fruit forward and elegant, with delicious stone fruit and delicate florals.
