This sweet and distinct coffee was produced by ten small-scale producers around the town of Aponte in Colombia’s Nariño region. Nestled among steep, rugged mountains, the town experiences a cool climate and high winds year-round. The soil here is exceptionally fertile, thanks to the nutrient-rich ash spread by the nearby Galeras volcano. The producers who contributed to this lot grow coffee on small plots of land around one hectare in size. At harvest time, they pick the ripe cherries and process them on-site at their own small mills.
This lot was processed using the honey method: the coffee cherries were put through a pulper, removing the skin but leaving some of the fruit pulp still intact, and then carefully dried on raised beds. Aponte’s unique microclimate is well-suited to this method, and local producers have become experts at honey processing – resulting in beautifully sweet and fragrant coffees like this one.
