We spoke with our Prahran shop manager, Ray, about building team culture and creating a workplace where quirks aren’t smoothed out but welcomed. He shared what surprised him when stepping into management, reflected on the neighbourhood’s changing history and its cast of characters, and talked about his habit of discovering great local spots on foot.

We chatted with the wonderful Satsuki about how she got her start in hospitality, what makes the Collins St shop so special, and how she likes to spend her days in and around Melbourne when she’s not busy at work.
