There is a sense of warmth and ease which you feel upon stepping into our Prahran shop – even on the busiest mornings! On quieter days, you might notice the perfectly tuned music playing from behind the bar, or the soft laughter that fills the space, such that it’s never completely silent, but never too much.
Much of this grounded, un-self-conscious energy comes from Ray, who has shaped the shop’s character ever since becoming manager. He welcomes everyone without theatrics, instead offering his own unmistakeable, steady honest, and – if you’re lucky – a dry joke or a sharp observation. When Ray greets you, he meets you exactly where you are, without performativity or shyness.
Ray first came to Market Lane after years of being drawn to its lack of fuss, and clarity in making beautiful coffee and looking after team-members. As a manager, he’s been able to realise his talent for reading the room, supporting staff, and making a space where others can exhale, and giving permission for people to be themselves, in all their imperfect, human detail.
We spoke with Ray about building team culture and creating a workplace where quirks aren’t smoothed out but welcomed. He shared what surprised him when stepping into management, reflected on the neighbourhood’s changing history and its cast of characters, and talked about his habit of discovering great local spots on foot. For Ray, the best hospitality isn’t loud or super-polished, but attentive, simple, and done with care. Because perfection isn’t the point; rather, it’s the candour of imperfections which remind us why we chose to work in hospitality in the first place: for the people.
