A Traditional Brazilian “Chimango” Biscuit Recipe, from Terezinha Rigno

In the town of Piatã, Brazil, Antônio and Terezinha Rigno are admired not only for their deep knowledge of coffee farming, but also for their generosity and care. Their farm, São Judas Tadeu, is one of the largest estates surrounding Piatã, and for more than forty years the Rignos have been pioneers of speciality coffee in the region.

Recognised many times in the prestigious Cup of Excellence awards, they are among Brazil’s most celebrated producers. Yet their true legacy lies in how they have shared their passion – offering guidance, mentorship, and practical support to their neighbours and community.

Whenever we visit producing countries, we are always struck by the hospitality and kindness shown to us – and nowhere is this truer than at São Judas. We’ve been visiting the Rignos every year since 2015, and each time we’re welcomed with such warmth and generosity. Stepping into their on-site kitchen, we are greeted with open arms, big smiles and freshly brewed coffee. This kitchen is the heart of the property – built especially to receive guests and coffee buyers, and always filled with laughter, conversation and something delicious from Terezinha’s oven.
