This coffee has notes of raisin and molasses with a cocoa finish.

This is our first time offering this beautifully complex and floral coffee from second-generation producer Gregorio Pablo Pablo. His farm, Yichkuh, is nestled into the hills surrounding the municipality of Concepción Huista, in Guatemala’s Huehuetenango region. The name Yichkuh means “farm with a well” in the local Poptí Mayan language and is an ode to the property’s natural waterhole. Like many farms in the region, Yichkuh is lush and fertile, thanks to the abundant freshwater of the nearby Río Azul and its tributaries. Gregorio tends the land with great care, using traditional techniques and organic practices. Alongside his family, he harvests the coffee by hand, using recycled coffee pulp to fertilise the trees and weeding manually in order to minimise the use of chemical inputs.
