Meet our Partners: Shanel from Panco Cafe

Can you tell us a bit about your background in hospitality?

It all started in a sushi conveyor belt restaurant when I was six years old. After eating there, I knew I wanted to be in the restaurant industry. As an adult, I worked in local restaurants in Manila as a corporate associate officer. I realised it was hypocritical of me to be training staff without having practical experience. This led me to travel to Australia to learn the ins and outs of hospitality. Funnily enough, I never imagined being a barista before I got to Melbourne – I didn’t even drink coffee or know what an espresso was!

When I moved back to Manila, I found myself craving the cafe culture Melbourne so proudly offers. There was a gap in the market for good specialty coffee served in a casual yet chic environment.

Was opening your own business always part of the plan?

Panco Cafe is my first venture into opening my own business, but I am extremely fortunate that my family already has experience in opening restaurants. I built on their knowledge, listened to all their advice, and also trusted and relied on my business partner, Daynard (who’s also my brother).

Without my time at Market Lane, Panco wouldn’t be where and what it is today. I’m able to fully operate a restaurant-cafe because of my mentors at Market Lane – who are my good friends until now – and easily navigate the bar area, which many may find challenging without the experience. Market Lane’s culture of community and integrity also shaped my conception of what a truly welcoming work environment can do for a team’s morale.

Can you tell us the story behind the name Panco and the vision that helped you establish the business?

Panco means PANdesal & COffee. Traditionally, Filipinos love to pair Pandesal (our version of a soft roll bread) with morning coffee – so what better way to highlight this cultural preference than to use it as our name? Panco’s vision is the bring the Australian cafe experience to the Philippines, and eventually to bring the Filipino cafe experience to the world.

What can someone expect when they visit Panco?

They can expect to enjoy great coffee and good food in a no-frills environment. It's simple, honest dishes that we've elevated to suit the modern palate without being too innovative or adventurous.

What’s something on your menu that you consider a ‘must try’?

The crowd favourites are the Breakfast Brisket (main), Tiramisu Latte (iced coffee), and Kalma (non-coffee: KALamansi + MAtcha). Personally, I love the Honey Cured Chicken (Melbourne style, served in a Pandesal sandwich) and the Local Asian Veggies (seasonal vegetables drizzled in adobo-vinaigrette).

Where do you go to eat, drink and hang out on your days off in Manila?

My favourite Chinese restaurant, Putien! You must try their signature Beancurd Soup – it'll instantly warm your body and soul. Hot tip: try it with their house-made chili for the extra aromatic kick.

How do you enjoy coffee at home?

Instant coffee...don't hate on me! Normally I'm on the go and in our cafes as early as 7am, so I drink my usual long black once I get to work.

What have been some of the most special moments serving people in your shop?

Recently, we've invited some of our regular customers to our third store’s soft opening, where they can bring their family and friends to enjoy a meal with us (and on us)! It's pretty heartwarming to see their faces light up when they hear the special invitation extended to them, and eventually how excited they become to partake in Panco's milestone.
