Madeleine de Proust is a special patisserie located in the heart of Melbourne/Naarm’s Carlton neighbourhood, where co-owners Hyoju Park (former Head Pastry Chef at Attica) and Rong Yao Soh (previously of London’s Galvin at Windows) use their vast expertise and experience to focus on creating a range of exquisite madeleines.
The shop’s name is an expression used to describe the evocation of sensory memories from childhood (an experience famously described in Marcel Proust’s Remembrance of Things Past). Hyoju and Rong Yao have a deep investment in evoking feelings of delight, wonder and perhaps even child-like joy in their customers, both through the experience of savouring one of their incredible pastries, and in the thoughtful and beautiful design of their shop space.
At Market Lane, we’ve been lucky to work with Hyoju and Rong Sao for several years now. The pair supply their madeleines to our Victoria St (Vic Market), Collins St (CBD), Sth Melbourne and Prahran Market shops, and they now serve our espresso to their customers at Madeleine de Proust, which they opened in November 2023. We chatted with Hyoju and Rong Yao about their impressive history as celebrated chefs, their decision to focus their business on creating and sharing madeleines, and the talented people who have inspired them along the way.
