This coffee was produced by Edward Sandoval. We were lucky enough to spend time with Edward on his farm this past November, and we’re in awe of his methodical and careful approach. We probably shouldn’t have been surprised...when our export partners at Pergamino first introduced us in 2022, they told us, “Edward is a rare breed of coffee producer.” This is because Edward has a long history working as a technical advisor and QC taster, and he brings a wealth of knowledge and experience to running his farm.
Quality is key to all of Edward’s practices and decisions on the farm, informing the varieties he selects and how he processes them. This lot is a Chiroso coffee – a variety known for its unique and complex cup profile. To bring out the best in it, Edward chose to extend the fermentation time to six days, intermittently adding extra cherries to slow down the fermentation and control the PH level. The result is a beautifully floral and vibrant coffee with delicious tropical fruit notes.
