For 100 years, the Chapada Diamantina region was mined for the gemstones embedded in its cliffs – in Portuguese, ‘Chapada Diamantina’ translates to ‘Diamond Plateau’ – but today the area is famous for its specialty coffee. Market Lane has been offering coffee from this region since 2012, but this is the first year we have purchased beans from producer José Santana.
José has four hectares of red and yellow catuaí variety coffee trees on his farm, along with other crops, including mangoes and beans. He farms year-round with his wife Magali and son Fabrico, and they hire 15 seasonal workers to assist them during the busy harvest season (June – September).
This coffee was processed using the pulped natural method: the skin and fruit were removed and the sticky, parchment-covered beans were laid out on patios and raked several times a day – over 10-20 days – to ensure a thorough and consistent dry.
